Instructions
 

Preparation

  • Gather all ingredients and set them up on your cooking surface.
  • Dice the chicken breasts into bite-sized pieces and place them in a bowl.
  • Pour buffalo sauce over chicken, mixing well to ensure all pieces are coated. Allow to marinate.

Coating

  • In a separate bowl, mix breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  • Coat each buffalo-coated chicken piece in the breadcrumb mixture thoroughly.

Baking

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Place the coated chicken bites on the prepared baking sheet, ensuring space between them.
  • Bake for 20-25 minutes, until the chicken is cooked through and the coating is golden brown.

Serving

  • While chicken bakes, combine cooked rice with olive oil and herbs in another bowl.

Notes

You can substitute chicken with turkey, shrimp, or firm tofu for a vegetarian option. Adjust the buffalo sauce to control spiciness.
