Wet Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup packed light or dark brown sugar
  • 2 large eggs
  • 1 1/2 cups canned pumpkin puree
  • 1/4 cup milk
  • 1 teaspoon pure vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C). Clean and organize your kitchen workspace.
  • Grease a 9x5 inch loaf pan with cooking spray or butter.
  • In a medium bowl, whisk together all the dry ingredients until well mixed.
  • In a separate large mixing bowl, whisk together the wet ingredients until smooth and combined.
  • Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  • Pour the thick batter into the prepared loaf pan.

Baking

  • Bake for 55-65 minutes, checking for doneness with a toothpick.
  • Allow to cool in the pan for 15 minutes before turning it out onto a wire rack.
