  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground cloves
  • 1 pinch salt
  • 1 pinch black pepper

Preparation

  • Gather all your ingredients; split the English muffins and measure out your spices.
  • Set up a spatula and a nonstick skillet to streamline the process.

Cooking

  • In a large nonstick skillet, melt 1 tablespoon of unsalted butter over medium heat.
  • Crack the eggs directly into the skillet and gently break the yolks with your spatula.
  • Sprinkle the ground spices, salt, and black pepper evenly over the eggs.
  • Place the split English muffin halves cut-side down onto the uncooked side of the eggs for about 2 to 3 minutes.
  • Carefully flip the entire egg-muffin assembly, bringing the muffins directly onto the skillet, facing the eggs upward.
  • Place one slice of cheddar or Swiss cheese on each egg portion and let it melt slightly.
  • Fold the edges of the cooked eggs gently over the muffins to form your sandwich.
  • Add the remaining 1 tablespoon of butter to the skillet and toast the sandwiches on both sides for about 2 minutes until golden brown.
  • Transfer to plates and serve immediately.

Notes
