Equipment

  • Roasting Pan
  • Meat Thermometer
  • Small saucepan
  • Whisk

Ingrédients

Beef Roast

  • 3 lbs beef roast chuck or round
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper

Glaze

  • 1/2 cup maple syrup pure
  • 1/4 cup dark molasses
  • 2 Tbsp brown sugar packed
  • 1 Tbsp Dijon mustard
  • 2 cloves garlic minced
  • 1 tsp Worcestershire sauce
  • 1/4 tsp smoked paprika

Instructions

  • Preheat oven to 325 °F (163 °C). Season the beef roast with salt and pepper.
  • Place the roast on a rack in a roasting pan and insert a meat thermometer.
  • In a small saucepan, combine maple syrup, molasses, brown sugar, Dijon mustard, garlic, Worcestershire sauce, and smoked paprika. Bring to a simmer over medium heat, whisking until smooth.
  • Baste the roast with half of the glaze, then put the roast in the oven. Roast until the internal temperature reaches about 135 °F (57 °C) for medium-rare, or your preferred doneness, basting every 30 minutes with more glaze.
  • During the last 15 minutes of cooking, brush on the remaining glaze to build a sticky, glossy crust.
  • Remove from oven, tent with foil, and let rest for at least 15 minutes before slicing.

Notes

This glazed beef is a great Thanksgiving or holiday alternative to turkey. Serve with mashed potatoes and green beans for a hearty feast.
