  • 1 package fresh or frozen gnocchi
  • 1 medium onion, finely diced
  • 1 medium carrot, finely diced
  • 4 cloves garlic, minced
  • 6 to 8 leaves fresh basil, cut into ribbons for garnishing
  • 1 jar tomato vodka sauce store-bought or homemade
  • Parmesan cheese, for serving
  • Olive oil, for sautéing

Preparation

  • Start by gathering all your ingredients.
  • Finely dice the onion and carrot, and mince the garlic cloves.
  • Cut the fresh basil leaves into ribbons.

Cooking

  • In a large skillet, heat a drizzle of olive oil over medium heat.
  • Add the diced onion and carrot, sautéing until softened, about 5-7 minutes.
  • Once your onion and carrot are soft, add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Pour in the tomato vodka sauce and stir to combine, allowing to simmer for about 5-10 minutes.
  • While the sauce simmers, prepare the gnocchi according to package instructions.
  • Once the gnocchi are tender, drain them and add directly to the skillet with the sauce.
  • Gently fold in the freshly cut basil ribbons.
  • Serve hot, topped with grated Parmesan cheese.

Notes

Reheating can be done on the stovetop over low heat or in the microwave. Ensure to store leftovers in an airtight container for up to 3-5 days.
