  • 1 cup cooked rice Use white or brown rice based on preference.
  • 1 cup black beans Can substitute with pinto or kidney beans.
  • 1 cup shredded cheese Cheddar or Mexican blend works well.
  • 1/2 cup diced onions Sauté for a sweeter flavor.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste Salt and pepper

Burrito Assembly

  • 2 large flour tortillas Substitute with corn tortillas for gluten-free.
  • 1 cup green chili sauce Can use red enchilada sauce or salsa verde as a substitute.

Preparation

  • Gather and measure all your ingredients.

Mixing the Filling

  • In a bowl, mix together the cooked rice, black beans, shredded cheese, diced onions, garlic powder, cumin, salt, and pepper until well combined.

Assembling Burritos

  • Take one tortilla and spoon a generous amount of the filling into the center. Roll the tortilla tightly, tucking in the sides as you go to secure the filling. Repeat with the second tortilla.

Baking

  • Arrange the rolled burritos seam-side down in a baking dish.
  • Pour the green chili sauce evenly over the top of the burritos.
  • Preheat your oven to 350°F (175°C) and bake the burritos for about 20 minutes or until heated through and cheese is melted.

Serving

  • Once done, let the burritos cool for a few minutes before serving hot with your favorite sides.

Notes
