  • 1 pound carrots, peeled and cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • 2 tablespoons butter can be substituted with plant-based butter for a vegan version
  • 1 tablespoon fresh parsley, chopped for garnish

Preparation

  • Begin by peeling and cutting the carrots into evenly sized chunks.
  • In a large pot, bring salted water to a boil. Once boiling, add the carrot chunks.
  • Cook for about 15-20 minutes or until the carrots are tender when pierced with a fork.
  • After cooking, carefully drain the water from the pot while keeping the carrots inside.

Mashing and Flavoring

  • Return the drained carrots to the pot. Add olive oil, butter, salt, and black pepper.
  • Using a fork or potato masher, start smashing the carrots to your desired consistency.
  • Stir in the freshly chopped parsley.

Serving

  • Serve the smashed carrots warm as a side dish to complement your main meal.

Notes

Store leftover smashed carrots in an airtight container in the refrigerator for 3-5 days. They can be reheated in the microwave or on the stovetop.
