Preparation

  • Gather all your ingredients, chopping any additional toppings.

Cooking the Beef

  • In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes.
  • Drain excess fat, stir in taco seasoning with a splash of water, and simmer for 2-3 minutes.

Assembling and Cooking Quesadillas

  • Reduce heat, place a tortilla in the skillet, sprinkle half with cheese, add seasoned beef, and top with more cheese.
  • Fold the tortilla over the filling and cook for 2-3 minutes until golden brown.
  • Flip and cook the other side until browned and cheese is melted.
  • Remove and keep warm; repeat with remaining ingredients.

Serving

  • Cut cooked quesadillas into wedges and serve hot with optional toppings.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. For freezing, wrap in plastic then foil, lasting up to 2 months. Reheat in a skillet over low heat.
