  • 4 pieces Boneless, skinless chicken thighs
  • 1 can (15 oz) Chickpeas (drained and rinsed)
  • 1 medium Onion (chopped)
  • 2 cloves Garlic (minced)
  • 1 cup Diced tomatoes (canned or fresh)
  • 1 cup Chicken broth
  • 2 tablespoons Honey Can be replaced with maple syrup for vegan option.
  • 1 tablespoon Olive oil

Spices

  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Paprika
  • 1/2 teaspoon Turmeric
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/4 teaspoon Cayenne pepper (optional for heat)

For Serving

  • 1 bunch Fresh cilantro or parsley (for garnish, optional)
  • 4 servings Cooked couscous or rice For serving.

Instructions
 

Preparation

  • Gather all your ingredients. Chop the onion, mince the garlic, and dice the tomatoes if using fresh ones. Rinse the chickpeas in a colander and set them aside.

Cooking

  • In the slow cooker, add the chopped onion and minced garlic as the base.
  • Place the boneless chicken thighs into the slow cooker. Add the rinsed chickpeas over the chicken, ensuring an even distribution.
  • In a separate bowl, mix the chicken broth with honey, olive oil, and all the spices: cumin, coriander, cinnamon, paprika, turmeric, salt, black pepper, and cayenne pepper. Pour this mixture over the chicken and chickpeas.
  • Pour the diced tomatoes on top of the other ingredients.
  • Cover the slow cooker and set it on low for 6-7 hours or high for 3-4 hours.
  • Check that the chicken is cooked through and easily shreds with a fork. The chickpeas should be soft and flavorful.
  • Garnish with fresh cilantro or parsley before serving.
  • Serve warm over cooked couscous or rice.

Notes

Avoid overcooking the chicken to prevent it from becoming dry. Rinse chickpeas to eliminate a gritty texture. Skipping spices may lead to bland flavors. Utilize high-quality chicken broth. Allow the dish to rest before serving for better flavor melding.
