Preparation

  • Gather all your ingredients. Chop the onion and drain the beans and corn.
  • In a skillet over medium heat, brown the ground beef for about 5-7 minutes.
  • Drain excess fat from the beef.
  • Add the chopped onion to the skillet and cook until soft, about 3-5 minutes.
  • Transfer the beef mixture into the slow cooker.
  • Add black beans, kidney beans, corn, diced tomatoes, taco seasoning, salt, and pepper. Stir to combine.
  • Cover the slow cooker and set it to low heat, cooking for 6-8 hours.
  • In the last 30 minutes, sprinkle the shredded cheddar cheese on top.
  • Serve hot after giving it a final stir.

Notes

Customize by adding jalapeños for heat or using ground turkey for a lighter option. Store leftovers in an airtight container in the fridge for 3-4 days, or freeze for up to 3 months.
