Preparation

  • Start by gathering all your ingredients. Ensure the chicken thighs are thawed if previously frozen. Pat them dry with a paper towel to promote crispiness during cooking. Have your seasonings ready and parsley chopped for garnish.
  • Place a large skillet over medium heat and add the olive oil, allowing it to warm up until it shimmers slightly but does not smoke.

Cooking

  • While the skillet heats, season the chicken thighs generously on both sides with salt, black pepper, garlic powder, and paprika. Rub the spices in well for an even coating.
  • Once the pan is hot, carefully place the chicken thighs in the skillet, skin-side down. Cook for about 7-8 minutes until the skin is golden brown and crispy.
  • After the skin is crispy, flip the chicken thighs and cook the other side for another 7-8 minutes, checking for doneness.
  • Using a meat thermometer, check that the internal temperature has reached 165°F.
  • Once cooked, remove the thighs from the skillet and let them rest on a plate for about 5 minutes, allowing the juices to retain.
