Assembly

  • Cut small indents into each mozzarella ball for the olives.
  • Fill each indent with finely chopped kalamata olives.
  • Cut the pepperoni into chunks and thin slices, and slice the red bell pepper into small wedges.
  • Begin threading the ingredients on a skewer: start with a bell pepper wedge, follow with a chunk of pepperoni, then a mozzarella 'eyeball' filled with olives, and finish with another mozzarella ball.

Chilling

  • Chill the assembled skewers in the refrigerator for about 30 minutes.

Serving

  • Serve your skewers arranged on a platter and add garnishes like fresh herbs.
