  • 3 cloves garlic, minced
  • 1 tablespoon olive oil

Preparation

  • Preheat your oven to 400°F (200°C).
  • Gather all your ingredients and slice the zucchinis into rounds and mince the garlic cloves.

Glazing

  • In a medium bowl, combine the hot honey, soy sauce, and minced garlic and whisk until well blended.

Chicken Preparation

  • Place the chicken thighs on a sheet pan and season generously with salt and pepper on both sides.
  • Arrange the sliced zucchinis around the chicken on the sheet pan.

Baking

  • Drizzle the hot honey mixture over the chicken and zucchini.
  • Bake in the preheated oven for 25-30 minutes, until the chicken is golden brown and the zucchinis are tender.
  • Check that the chicken's internal temperature reaches 165°F (74°C).

Serving

  • Remove the pan from the oven and let it rest for a few minutes before serving.

Notes

For extra flavor, marinate the chicken in the hot honey mixture a few hours ahead of time. Consider adding herbs like rosemary or thyme, and sprinkle sesame seeds before serving for crunch.
