Instructions
Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
Heat olive oil or butter in a large skillet over medium heat. Add the sliced mushrooms and cook for 6–7 minutes until golden brown and tender.
Add minced garlic, salt, and pepper to the mushrooms. Sauté for 1 minute until fragrant.
Add the spinach and cook until wilted, about 2–3 minutes.
Pour in the heavy cream and stir to combine. Gradually add Parmesan cheese, mixing until melted and creamy. Simmer for 2–3 minutes.
Add the drained pasta to the skillet and toss to coat. Adjust consistency with reserved pasta water as needed.
Taste and adjust seasoning. Serve hot, topped with extra Parmesan cheese if desired.
