  • 8 oz pasta penne or fettuccine
  • 1 tbsp olive oil or butter for sautéing
  • 8 oz mushrooms sliced
  • 3 cups fresh spinach washed and trimmed
  • 3 cloves garlic minced
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground
  • 1/2 cup heavy cream or half-and-half
  • 1/4 cup Parmesan cheese grated
  • 1/2 cup reserved pasta water for adjusting sauce consistency

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  • Heat olive oil or butter in a large skillet over medium heat. Add the sliced mushrooms and cook for 6–7 minutes until golden brown and tender.
  • Add minced garlic, salt, and pepper to the mushrooms. Sauté for 1 minute until fragrant.
  • Add the spinach and cook until wilted, about 2–3 minutes.
  • Pour in the heavy cream and stir to combine. Gradually add Parmesan cheese, mixing until melted and creamy. Simmer for 2–3 minutes.
  • Add the drained pasta to the skillet and toss to coat. Adjust consistency with reserved pasta water as needed.
  • Taste and adjust seasoning. Serve hot, topped with extra Parmesan cheese if desired.

Notes

For extra flavor, add a squeeze of lemon juice before serving or sprinkle crushed red pepper flakes for a mild kick. This dish pairs beautifully with garlic bread and a light salad.
