For the Base

  • 4 medium potatoes, diced Choose your preferred type of potato.
  • 1 pound sausage, crumbled Use your favorite type of sausage.
  • 1 cup bell peppers, diced Mix different colors for visual appeal.
  • 1 cup onion, diced
  • 4 large eggs
  • 1 cup shredded cheese Cheddar works wonderfully.
  • Salt and pepper to taste

Preparation

  • Gather all your ingredients. Wash and dice the potatoes, bell peppers, and onion.
  • In a large pot, bring water to a boil. Add the diced potatoes and cook until tender, about 10-15 minutes. Drain and set aside.

Cooking

  • In a large skillet, heat some oil over medium heat. Add the crumbled sausage and cook until browned, breaking it apart as it cooks, about 6-8 minutes.
  • Stir in the diced onion and bell peppers, and cook until the vegetables soften, about another 5 minutes.
  • Add the drained potatoes to the skillet and mix everything together. Season with salt and pepper.
  • Create wells in the potato mixture using a spatula.
  • Carefully crack an egg into each well. Cover and cook for about 5-7 minutes, until eggs are cooked to your liking.
  • Sprinkle shredded cheese over the top, cover for an additional minute until melted.

Serving

  • Scoop servings into bowls and enjoy immediately. Consider garnishing with sliced green onions or fresh herbs.

Notes

Great for meal prep; store leftovers in an airtight container for 3-4 days. Can freeze prior to adding eggs and cheese.
