  • Start by gathering all your ingredients. Ensure that the unsalted butter is softened to room temperature for easier mixing. Pre-measure the flour, baking soda, and salt to streamline the process.
  • In a large mixing bowl, cream together the softened unsalted butter and brown sugar until the mixture is light and fluffy. This typically takes about 2-3 minutes. Once combined, add the honey and mix well until fully incorporated.
  • In another bowl, whisk together the all-purpose flour, baking soda, and salt for even distribution.
  • Gradually add the dry ingredient mixture into the wet ingredients, mixing until no dry flour remains visible.
  • Gently fold in the chopped pistachios with a spatula or wooden spoon, being careful not to over-mix.
  • Using a spoon or cookie scoop, drop spoonfuls of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  • Sprinkle a little coarse sea salt on top of each cookie before baking.
