Preparation

  • Start by gathering all your ingredients. Pre-chop the spinach and mince the garlic to ensure a quick and efficient cooking process.
  • Preheat your oven to 375°F (190°C).

Filling Preparation

  • In a medium bowl, combine the ricotta cheese, chopped spinach, grated parmesan, minced garlic, Italian seasoning, salt, and pepper. Mix until smooth and creamy.

Chicken Preparation

  • Using a sharp knife, make a pocket in each chicken breast without cutting all the way through.
  • Generously fill each pocket of the chicken breasts with the ricotta filling.

Cooking

  • In a large skillet over medium-high heat, warm the olive oil. Sear each stuffed chicken breast for about 3-4 minutes per side, or until golden brown.
  • Transfer the chicken breasts to a baking dish and bake for 20-25 minutes. Use a meat thermometer to ensure it reaches 165°F (74°C).
  • Once cooked, allow the chicken to rest for 5-10 minutes before serving.

Notes

For deeper flavor, consider marinating the chicken with olive oil, garlic, and lemon juice. Add fresh herbs for extra taste.
