Rhubarb Filling

  • 1/2 tsp vanilla extract Adds depth to the mixture.

Instructions
 

Preparation

  • Gather all necessary ingredients and thaw puff pastry as needed.
  • Chop the rhubarb into 1/2-inch pieces.

Cook the Base

  • In a saucepan over medium heat, combine rhubarb, granulated sugar, lemon juice, and vanilla extract. Stir until bubbling, about 5-7 minutes.
  • Remove from heat and let cool.

Mix Filling

  • In a bowl, combine cream cheese, powdered sugar, and lemon zest. Blend until smooth.

Preheat Oven

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare Puff Pastry

  • On a floured surface, roll out the thawed puff pastry and cut into rectangles, about 3x4 inches.
