  • 2 ripe mangoes, peeled, pitted, and thinly sliced Choose firm, ripe mangoes.
  • 1 small red onion, thinly sliced Ensure uniform slicing for texture.
  • 1 small cucumber, thinly sliced Use fresh and firm cucumbers.
  • 1 red bell pepper, thinly sliced Can substitute with other sweet peppers.
  • 1 cup cherry tomatoes, halved Add extra color.
  • 1/4 cup fresh cilantro leaves, chopped May substitute with parsley.
  • 1/4 cup fresh mint leaves, chopped May use dried mint sparingly.

Dressing

  • 3 tablespoons fresh lime juice Freshly squeezed for the best flavor.
  • 2 tablespoons honey Can substitute with maple syrup.
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Freshly ground is best.

Preparation

  • Begin by preparing all your ingredients. Peel the mangoes, scoop out the pits, and cut them into thin slices.
  • Make sure your onion, cucumber, and red bell pepper are also thinly sliced for consistent texture.

Dressing

  • In a small bowl, whisk together lime juice, honey, olive oil, salt, and black pepper.

Combine Salad

  • In a large salad bowl, combine all the sliced ingredients: mango, onion, cucumber, bell pepper, and cherry tomatoes.
  • Toss them gently to keep the mango slices intact while ensuring they’re mixed well.

Add Herbs

  • Add the chopped cilantro and mint leaves into the salad.
  • You can reserve a little of the herbs for garnishing later if desired.

Dress and Serve

  • Drizzle the prepared lime dressing all over the salad.
  • Using salad tongs or two large spoons, toss everything together gently.
  • Chill your salad in the refrigerator for at least 15 minutes to let flavors meld together.
  • Before serving, garnish with additional fresh herbs or a sprinkle of chopped nuts.
  • Serve as a light meal or a vibrant side dish.

Notes
