  • 1 cup quinoa Rinse before cooking.
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed Substitute with chickpeas or lentils if needed.
  • 1 cup corn, fresh or frozen
  • 1 medium red bell pepper, diced
  • 1 medium avocado, diced Add fresh just before serving.
  • 1/4 cup cilantro, chopped
  • 1 medium lime, juiced Generously season the dish.
  • to taste Salt and pepper Essential to enhance flavors.

Preparation

  • Gather all your ingredients before you start cooking. Rinse the quinoa in a fine-mesh sieve under cold water to remove its natural bitterness. Cube the red bell pepper and avocado, and chop the cilantro.

Cook the Base

  • In a medium-sized pot, combine the rinsed quinoa and vegetable broth. Bring to a boil over medium heat, then reduce the heat to low. Cover the pot and let it simmer for about 15 minutes or until the liquid is absorbed. Once cooked, fluff the quinoa with a fork and let it cool.

Mix the Black Beans

  • While the quinoa is cooking, rinse the black beans under cold water and set them aside.

Add Veggies to the Bowl

  • In a large mixing bowl, combine the rinsed black beans, corn, diced red bell pepper, and chopped cilantro. Mix these ingredients well.

Combine with Quinoa

  • After your quinoa has cooled slightly, add it to the veggie mixture in the bowl. Gently fold the quinoa in without mashing the contents.

Season the Mixture

  • Squeeze the juice of one lime over the mixture and season with salt and pepper to taste.

Toss to Combine

  • Using a spatula or your hands, toss the mixture gently to ensure everything is well-mixed.

Serve and Enjoy

  • Dish out generous servings into individual bowls or serve it as a communal dish, garnished with additional cilantro or lime wedges.

Notes

Store leftovers in an airtight container in the refrigerator for up to four days. Add avocado fresh just before serving to maintain texture.
