For the Chicken Marinade

  • 1.5 pounds skinless boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • 0.5 teaspoon curry powder
  • 1 tablespoon Greek yogurt

For the Sauce

  • 3 tablespoons vegetable oil
  • 3 tablespoons butter, divided
  • 6 cloves garlic, minced
  • 1 medium onion, diced
  • 1 15-ounce can tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt, adjust to taste
  • 0.5 teaspoon black pepper
  • 2 cups heavy cream
  • 0.5 teaspoon cayenne pepper, optional for heat
  • 1 teaspoon garam masala
  • 0.5 teaspoon curry powder
  • 0.25 cup freshly chopped parsley, optional for garnish

Instructions
 

Preparation

  • Clear your kitchen space and gather all your ingredients and utensils.
  • In a bowl, combine the chopped chicken thighs with salt, garlic powder, sweet paprika, curry powder, and yogurt. Mix well and let marinate for 15-30 minutes.

Cooking

  • Heat vegetable oil and 1 tablespoon of butter in a large skillet over medium heat. Add marinated chicken and sear for 6-8 minutes until golden brown. The chicken doesn't need to be fully cooked.
  • Transfer the chicken to a plate. In the same skillet, add the remaining butter and sauté the diced onion and minced garlic for 3-4 minutes until soft.
  • Add tomato sauce, sugar, salt, black pepper, cayenne pepper (if using), garam masala, and additional curry powder to the skillet. Stir and let simmer for 5-7 minutes.
  • Return the chicken to the skillet, ensuring it's coated with the sauce. Pour in the heavy cream and bring to a gentle simmer. Cook for another 10-15 minutes.
  • Taste and adjust seasoning as necessary. If the sauce is too thick, thin it out with a bit of water or cream.
  • Add an extra tablespoon of butter for richness and stir in. Garnish with freshly chopped parsley before serving.

Serving

  • Serve the butter chicken with warm naan bread and a side of steamed rice.

Notes

To ensure optimal flavor, use fresh ingredients and feel free to adjust ingredients and spices according to preference. This recipe can be made dairy-free by substituting yogurt and cream with coconut alternatives.
