  • 1/4 cup fresh parsley, chopped

Dressing Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar

Preparation

  • Gather all the ingredients for your Portuguese Black Eyed Pea Salad. Drain and rinse the black-eyed peas thoroughly.
  • Dice the bell pepper and cucumber into bite-sized pieces. Chop the red onion finely, and halve the cherry tomatoes. Chop the fresh parsley.

Combine Ingredients

  • In a large mixing bowl, combine the black-eyed peas, diced bell pepper, cucumber, chopped red onion, halved cherry tomatoes, and parsley. Mix gently.

Prepare the Dressing

  • In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
