Preparation

  • Start by soaking the pinto beans overnight in plenty of water.
  • Drain the soaked beans before starting the cooking process.

Cooking

  • Cook the chopped bacon in a large pot over medium heat until crispy, about 5-7 minutes.
  • Stir in the crumbled chorizo and cook for an additional 3-4 minutes until browned.
  • Add the diced onion, minced garlic, and diced jalapeño, sautéing for about 5 minutes until softened.
  • Stir in the drained pinto beans, ensuring they are well-coated with the mixture.
  • Sprinkle in the cumin, chili powder, and salt, mixing well.
  • Pour enough water to cover the beans by at least an inch and bring to a boil.
  • Reduce the heat, cover the pot, and let simmer for about 1.5 hours until beans are tender.
  • Mash the beans to your desired consistency before serving.

Serving

  • Serve warm, alongside cornbread, rice, or tortilla chips, and fresh toppings.

Notes

For storage, keep leftovers in an airtight container in the fridge for up to 4-5 days. For longer storage, freeze in single-serve portions. Adjust spices and ingredients based on dietary preferences.
