Plum Upside Down Cake
A delightful cake featuring caramelized plums atop a soft, buttery base, perfect for any occasion.
Ingredients
For the Topping
- 4 ripe plums, pitted and sliced Use ripe plums for the best flavor.
- 1 cup brown sugar
- 1/2 cup butter (1 stick)
For the Cake
- 1 cup all-purpose flour Use a gluten-free blend for a gluten-free version.
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 2 large eggs Replace with flax eggs for a vegan version.
- 1 teaspoon vanilla extract
- 1/2 cup milk Use almond milk or oat milk for a dairy-free alternative.
Instructions
Preparation
- Gather all ingredients and preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
Cook the Base
- In a small saucepan, combine the butter and brown sugar over medium heat, stirring until bubbly and slightly thick.
Arrange the Plums
- Pour the caramel mixture into the prepared pan, then arrange sliced plums over the caramel.
Prepare the Cake Batter
- In a mixing bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream granulated sugar and remaining butter until fluffy. Beat in eggs one at a time, then mix in vanilla.
- Gradually mix in dry ingredients and milk, alternating between them.
Bake the Cake
- Pour batter over the plums in the pan and bake for 40-45 minutes until a toothpick comes out clean.
Cool and Serve
- Cool for 10 minutes before inverting onto a plate. Allow to cool slightly before serving.
Notes
Store leftovers in an airtight container. Great topped with whipped cream or ice cream.
