For the Topping

  • 4 ripe plums, pitted and sliced Use ripe plums for the best flavor.
  • 1 cup brown sugar
  • 1/2 cup butter (1 stick)

For the Cake

  • 1 cup all-purpose flour Use a gluten-free blend for a gluten-free version.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 2 large eggs Replace with flax eggs for a vegan version.
  • 1 teaspoon vanilla extract
  • 1/2 cup milk Use almond milk or oat milk for a dairy-free alternative.

Preparation

  • Gather all ingredients and preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.

Cook the Base

  • In a small saucepan, combine the butter and brown sugar over medium heat, stirring until bubbly and slightly thick.

Arrange the Plums

  • Pour the caramel mixture into the prepared pan, then arrange sliced plums over the caramel.

Prepare the Cake Batter

  • In a mixing bowl, whisk together flour, baking powder, and salt.
  • In another bowl, cream granulated sugar and remaining butter until fluffy. Beat in eggs one at a time, then mix in vanilla.
  • Gradually mix in dry ingredients and milk, alternating between them.

Bake the Cake

  • Pour batter over the plums in the pan and bake for 40-45 minutes until a toothpick comes out clean.

Cool and Serve

  • Cool for 10 minutes before inverting onto a plate. Allow to cool slightly before serving.

Notes

Store leftovers in an airtight container. Great topped with whipped cream or ice cream.
