  • 8 oz Brie cheese, high-quality
  • 1 cup roasted, shelled pistachios, chopped
  • 2 tbsp natural honey, high-quality
  • 1 tbsp fresh rosemary, chopped
  • 1 pinch sea salt
  • 1 pinch freshly cracked black pepper
  • 1 sheet puff pastry, chilled
  • 1 large egg, beaten (for egg wash)
  • 1 cup fresh cranberries or pomegranate seeds (optional) for garnish

Preparation

  • Gather and prepare all your ingredients. Chop the roasted pistachios and fresh rosemary, and preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine chopped pistachios, honey, rosemary, sea salt, and black pepper; stir until mixed.
  • Roll out chilled puff pastry on a floured surface and cut into 3x3-inch squares.
  • In the center of each square, place a tablespoon of Brie cheese, followed by a portion of the pistachio mixture.
  • Fold the corners of the pastry over the Brie to seal it, ensuring edges are tightly pinched.
  • Apply egg wash over the outside of each pastry for a golden finish.
  • Place the prepared bites on a parchment-lined baking sheet, and bake for 15-20 minutes until golden brown.
  • Garnish with cranberries or pomegranate seeds after removing from the oven and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. You can freeze the assembled bites for up to a month.
