Preparation

  • Gather all your ingredients and ensure they are at room temperature. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mixing Batter

  • In a large bowl, cream the softened unsalted butter and granulated sugar until light and fluffy, about 3-5 minutes.
  • Add the eggs one at a time, mixing well after each addition.
  • Pour in the milk and add the vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the flour mixture to the wet ingredients, stirring gently until just combined.
  • Fold in the drained crushed pineapple.

Baking

  • Divide the batter evenly between the two prepared cake pans.
  • Bake in the preheated oven for 25-30 minutes. Check for doneness with a toothpick; it should come out clean.
  • Let the cakes cool for about 10 minutes before turning them out onto wire racks to cool completely.

Notes

Store in an airtight container; it lasts about 3-5 days in the fridge. You can freeze leftovers for up to three months.
