  • 170 g unsalted butter, melted

  • 80 g unsweetened fine desiccated coconut (for the mixture)
  • 90 g unsweetened cocoa powder

Preparation

  • Begin by measuring out your ingredients. It’s essential to use precise amounts for the best results.

Cooking the Base

  • In a large saucepan, mix together the granulated sugar, melted unsalted butter, and whole milk.
  • Set the heat to medium and bring this mixture to a gentle boil, once it reaches a full rolling boil, do not stir, and time it for 5-6 minutes.
  • Monitor the temperature, aiming for 107-110°C.

Combine Ingredients

  • While the base is bubbling, take another bowl and mix rolled oats, desiccated coconut, and cocoa powder.
  • Once the syrup is ready, carefully pour it over the dry oat mixture and stir gently until fully combined.
  • Let the mixture cool down to almost room temperature.

Shaping the Snowballs

  • With chilled hands, scoop out portions of the mixture and roll them into 4 cm balls.
  • Take the remaining desiccated coconut and roll each ball through it, ensuring they are fully coated.

Storage

  • Transfer your snowballs to an airtight container. If not serving immediately, store them in the refrigerator.

Notes

Tips: For an extra flavor boost, add vanilla extract. Consider adding nuts or spices like cinnamon for variety.
