For the Chocolate Coating

  • 1 cup chocolate chips Use dairy-free for a vegan option.
  • 1 tbsp coconut oil (optional) Helps achieve a smoother chocolate coating.

Preparation

  • Start by gathering all your ingredients on the counter. Ensure your cream cheese is softened for easy mixing.
  • In a large mixing bowl, combine the chopped pecans, softened cream cheese, powdered sugar, and vanilla extract. Mix until well combined and smooth.
  • Using your hands, roll the mixture into small, bite-sized balls and place onto a baking sheet lined with parchment paper.
  • Pop the baking sheet into the refrigerator and allow to chill for about 30 minutes.

Chocolate Coating

  • While the truffles chill, melt the chocolate chips in a microwave-safe bowl. Add coconut oil if desired, heating in short bursts and stirring frequently until smooth.
  • Remove the chilled truffles from the refrigerator, dip each one into the melted chocolate, ensuring full coating. Let excess chocolate drip off before placing back on parchment.
  • For an optional touch, sprinkle additional chopped pecans on top before the chocolate sets.
  • Chill again in the fridge for 20-30 minutes or until the chocolate has fully set.

Notes

Store in an airtight container in the refrigerator for up to a week. They can also be frozen for up to three months. For dietary adjustments, use vegan cream cheese and dairy-free chocolate.
