For the crust

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup sugar
  • 1/4 teaspoon salt

For the filling

  • 2 large eggs
  • 1 cup light corn syrup
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Preparation

  • Gather all your ingredients. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  • In a medium bowl, combine the flour, softened butter, sugar, and salt until it forms a dough-like consistency.

Cooking

  • Press the dough evenly into the bottom of the prepared baking pan.
  • Bake the crust for about 10-12 minutes until it starts to set.
  • In another bowl, whisk the eggs, corn syrup, packed brown sugar, and vanilla extract until well combined.
  • Stir in the chopped pecans until evenly distributed.
  • Pour the pecan mixture over the pre-baked crust and spread it out evenly.
  • Bake for an additional 30-35 minutes until the filling is set and edges are slightly browned.

Cooling and Serving

  • Let the bars cool in the pan for about 30 minutes before slicing.
  • Carefully lift the bars from the pan and cut them into squares or rectangles for serving.
  • Serve alone or with whipped cream or vanilla ice cream for an indulgent experience.

Notes

Store in an airtight container; can be kept at room temperature for up to three days or in the fridge for up to a week. For longer storage, freeze wrapped bars in a freezer-safe container for up to three months.
