  • 1 cup all-purpose flour
  • 1/2 cup peanut butter creamy or chunky
  • 1/2 cup sugar or brown sugar for extra moisture
  • 1/2 cup milk dairy or non-dairy
  • 1 egg or flax egg for vegan version
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions
 

  • Preheat oven to 350°F (175°C) and prepare muffin tins with liners or grease lightly.
  • In a bowl, whisk together flour, baking powder, and salt until combined.
  • In another bowl, mix peanut butter, sugar, milk, and egg until smooth and creamy.
  • Slowly add wet ingredients to dry ingredients. Mix gently until just combined—do not overmix.
  • Fill muffin cups two-thirds full with batter.
  • Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Customize these muffins with chocolate chips, banana, granola, or a drizzle of honey for a fun twist. Store in an airtight container for up to 3 days, or freeze for longer freshness.
