  • 1 cup peanut butter smooth or crunchy
  • 1 ripe banana mashed
  • 1/2 cup brown sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup oats old-fashioned or quick oats

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine peanut butter, mashed banana, brown sugar, and vanilla extract. Mix until smooth and creamy.
  • In a separate bowl, whisk together baking soda, salt, and oats.
  • Add the dry ingredients to the wet mixture and stir until evenly combined.
  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10–12 minutes or until the edges are lightly golden.
  • Remove from the oven and let the cookies cool on the baking sheet for 2–3 minutes before transferring to a wire rack to cool completely.
  • Serve warm or store in an airtight container once completely cooled.

Notes

For a gluten-free version, use certified gluten-free oats. To make them vegan, replace brown sugar with coconut sugar or maple syrup. You can add chocolate chips, chopped nuts, or a sprinkle of cinnamon for extra flavor. These cookies freeze well for up to three months.
