For the Peach Filling

  • 2 cups fresh peaches, diced Fresh peaches are recommended over canned.
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon

For the Vanilla Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk Can use almond or oat milk for a dairy-free option.
  • 1/2 teaspoon vanilla extract

Instructions
 

Preparation

  • Gather all ingredients on a clean countertop and pre-measure rolled oats, flour, brown sugar, and salt.
  • Chop the fresh peaches into bite-sized pieces, removing the pit.

Baking

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine rolled oats, all-purpose flour, brown sugar, melted butter, and salt. Mix until crumbly.
  • Take half of the oat mixture and set it aside for topping.
  • Press the remaining oat mixture firmly into a greased 9x9 inch baking dish.
  • In another bowl, toss the diced peaches with lemon juice and cinnamon. Spread this mixture evenly over the oat base.
  • Sprinkle the reserved oat mixture evenly over the peach layer.
  • Bake in the preheated oven for 30-35 minutes until golden brown on top.

Finishing Touches

  • While bars are baking, whisk together powdered sugar, milk, and vanilla extract until smooth to make the glaze.
  • Let the bars cool completely, drizzle the vanilla glaze over the top, slice into squares, and serve.

Notes

These bars can be stored in an airtight container at room temperature for 2 days or in the refrigerator for up to 1 week.
