For the Crust

  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted

For the Cheesecake Filling

  • 2 packages cream cheese, softened (8 oz each)
  • 1 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Peach Layer

  • 3 cups fresh peaches, sliced

For the Topping

  • 1 teaspoon cinnamon
  • 0.5 cups all-purpose flour
  • 0.25 cups brown sugar
  • 0.25 cups oats

Preparation

  • Gather all your ingredients and measure them out. Soften the cream cheese by leaving it at room temperature for about 30 minutes. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

Prepare the Base

  • In a medium bowl, mix together the graham cracker crumbs and melted butter until they form a sandy texture. Press this mixture firmly into the bottom of the prepared pan to create the crust.

Make the Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese and granulated sugar using an electric mixer until smooth and creamy. Add the eggs one at a time, incorporating well before adding the next. Mix in the vanilla extract.

Layer the Cheesecake and Peaches

  • Pour the cheesecake mixture over the graham cracker crust, spreading it evenly. Arrange sliced peaches over the cheesecake layer.

Prepare the Topping

  • In a separate bowl, mix cinnamon, flour, brown sugar, and oats. Sprinkle this topping over the peach layer.

Bake

  • Place the pan in the preheated oven and bake for 45-50 minutes until the edges are golden brown and the center is slightly jiggly.

Cool and Chill

  • Allow the bars to cool at room temperature for about 30 minutes before refrigerating for at least 2 hours.

Serve

  • Once chilled, cut into squares and serve. Enjoy the combination of creamy cheesecake and sweet peaches!

Notes

Store in an airtight container in the refrigerator for up to 4-5 days. They can also be frozen for up to 3 months.
