Preparation

  • Prep your workspace and ingredients by ensuring your kitchen is tidy and gathering all necessary tools and ingredients.
  • Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.

Making the Dough

  • In a large mixing bowl, beat together the softened butter and granulated sugar until light and fluffy, about 2 minutes.
  • Add in the egg and vanilla extract, mixing until well incorporated.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry mixture to the wet ingredients, mixing on low speed. Add the milk and mix until fully combined.

Baking the Cookies

  • Scoop about 1 tablespoon of dough, roll into a ball, and place on the baking sheet, spaced 2 inches apart.

Making the Filling

Assembling

  • Pair cooled cookies by size. Spread filling on the flat side of one, and top with another cookie.
  • Allow to sit for 10 minutes for the filling to firm up slightly.

Notes

Chill dough for 30 minutes for better-shaped cookies. Keep an eye on baking time to prevent overbaking. Experiment with different flavors in the filling for variety.
