Preparation

  • Start by gathering all your ingredients.
  • Thinly slice the zucchinis using a sharp knife or a mandoline slicer.
  • Place the sliced zucchinis on paper towels, sprinkle salt over them, and let sit for 20 minutes.
  • After 20 minutes, pat the zucchini slices dry with a clean paper towel.
  • In a bowl, combine the grated Parmesan cheese, garlic powder, paprika, salt, and pepper. Mix until well combined.
  • Take each zucchini slice and coat it in the cheese mixture.
  • Place the coated zucchini slices on a baking sheet lined with parchment paper.
  • Spray the zucchini slices lightly with olive oil.

Baking

  • Preheat your oven to 225°F (110°C). Bake the zucchini for 1-2 hours until they are crispy, flipping the slices halfway through.
  • Once done, remove the baking sheet from the oven and let the chips cool.

Notes

For a dairy-free version, consider using nutritional yeast instead of Parmesan. Ensure all other ingredients are also plant-based. Avoid thick slices and make sure to spread the slices out on the pan.
