  • 8 oz fettuccine pasta
  • 2 cups fresh spinach
  • 1 cup sliced mushrooms
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream Can substitute with plant-based cream for a lighter option

Instructions
 

Preparation

  • Gather all your ingredients: fettuccine, spinach, sliced mushrooms, Parmesan cheese, olive oil, garlic, heavy cream, salt, and pepper.
  • Boil a large pot of salted water and cook the fettuccine according to the package instructions until al dente. Reserve some pasta water and drain the rest.

Cooking

  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced mushrooms, sautéing them for about 5-7 minutes until the mushrooms are tender.
  • Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  • Pour in the heavy cream and simmer for about 3-4 minutes until the mixture thickens slightly.
  • Add the cooked fettuccine to the skillet, tossing to coat the pasta with the creamy sauce. Add reserved pasta water if the mixture is too thick.
  • Stir in the Parmesan cheese until melted and well-combined.
  • Season to taste with salt and pepper.

Serving

  • Serve hot, garnishing with additional Parmesan or freshly cracked pepper if desired.

Notes

Can be customized easily with different vegetables or proteins. Suitable for potlucks as leftovers maintain flavor and texture.
