Instructions

Preparation

  • Preheat the oven to 425°F (220°C). Wash and peel the sweet potatoes, then slice them into 1/2-inch thick medallions.

Coating

  • In a large bowl, combine olive oil, garlic powder, thyme, rosemary, salt, and pepper. Stir until well mixed.
  • Add the sweet potato medallions, tossing to ensure every piece gets coated in the flavorful mixture.

Baking

  • Lay the coated medallions in a single layer on a baking sheet, ensuring they do not overlap.
  • Sprinkle grated Parmesan cheese evenly over the tops of the medallions.
  • Bake for 25-30 minutes or until the medallions are tender and have developed a golden brown crust.

Serving

  • Check doneness with a fork. If cooked through, remove from the oven and let cool briefly.
  • Garnish with fresh parsley if desired and serve warm.

Notes

For added flavor, consider substituting with garlic-infused oil or adding a splash of lemon juice before serving. Ensure medallions are evenly spaced on the baking sheet to achieve maximum crispiness.
