  • 2 pounds baby potatoes halved
  • 1/4 cup olive oil
  • 1/2 cup Parmesan cheese grated
  • 2 tsp garlic powder
  • 1 tbsp dried oregano
  • 1 tbsp dried thyme
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 425°F (220°C). Wash and halve the baby potatoes.
  • In a large bowl, mix olive oil, garlic powder, oregano, thyme, salt, and pepper.
  • Add the potatoes to the bowl and toss until fully coated.
  • Spread the potatoes on a baking sheet in a single layer.
  • Sprinkle grated Parmesan evenly over the potatoes.
  • Roast for 30–35 minutes, flipping halfway through, until golden brown and crispy.
  • Serve hot as a side dish with grilled meats, salads, or dipping sauces.

Notes

For a dairy-free version, replace Parmesan with nutritional yeast. You can also add red pepper flakes for a spicy kick or fresh herbs for extra flavor. Store leftovers in the fridge for up to 5 days or freeze for up to 3 months.
