Preparation

  • Measure all ingredients to ensure a smooth cooking process.
  • Chop broccoli into bite-sized florets, julienne the carrots, and finely chop the onion.

Cooking the Base

  • Melt butter in a large, heavy-bottomed pot over medium heat.
  • Add chopped onions and cook until translucent with lightly golden edges, about 4 to 5 minutes.

Making the Roux

  • Stir in the all-purpose flour to form a roux and keep stirring and cooking until the mixture turns peanut butter color, around 4 minutes.

Adding Liquid Ingredients

  • Gradually add chicken broth and half and half while whisking to form a smooth mixture.
  • Increase heat to medium-high and bring the mixture to a gentle simmer.

Cooking the Vegetables

  • Add broccoli and julienned carrots to the pot and simmer uncovered for about 15 minutes, stirring every 3 to 4 minutes.

Incorporating Cheese

  • Stir in salt and shredded cheddar cheese until fully melted and incorporated.

Final Adjustments
