  • 1 pound sausage Cooked until browned
  • 2 cups pancake mix
  • 2 cups milk Can substitute with almond or oat milk
  • 4 large eggs Room temperature
  • 1 cup shredded cheese Cheddar, mozzarella, or pepper jack suggested
  • 1/2 cup maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Preparation

  • Gather all your ingredients and preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, cook the sausage until browned, breaking it into small pieces. Drain excess fat.
  • In a large bowl, mix pancake mix, milk, eggs, baking powder, and salt, stirring until smooth.
  • Grease a baking dish with cooking spray or butter.
  • Evenly distribute the cooked sausage across the bottom of the greased baking dish.
  • Carefully pour the pancake batter over the sausage, ensuring an even spread.
  • Drizzle maple syrup over the batter.
  • Sprinkle shredded cheese over the top of the batter.

Cooking

  • Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown.
  • Let the casserole cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Can be reheated in the microwave or oven, and frozen for up to 2-3 months.
