  • 8 oz macaroni pasta
  • 2 tbsp olive oil
  • 1 lb smoked sausage sliced
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 1 tbsp Cajun seasoning
  • 3 cups chicken broth
  • 2 cups shredded cheese cheddar or blend
  • salt and pepper to taste
  • chopped green onions for garnish (optional)

Instructions
 

  • Gather all ingredients and prepare them by slicing sausage, dicing onion and bell pepper, and mincing garlic.
  • Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned and slightly crispy, about 5–7 minutes.
  • Add onion, garlic, and bell pepper to the skillet. Sauté for 3–4 minutes until softened and fragrant.
  • Stir in the Cajun seasoning to coat the sausage and vegetables evenly.
  • Add the macaroni and pour in the chicken broth. Stir well and bring to a boil.
  • Reduce heat and simmer for about 8–10 minutes, stirring occasionally until pasta is tender and most liquid is absorbed.
  • Lower the heat and stir in the shredded cheese until fully melted and creamy.
  • Taste and adjust with salt and pepper as needed.
  • Garnish with chopped green onions if desired and serve warm.

Notes

To make this dish spicier, add jalapeños or a dash of hot sauce. For a lighter version, use turkey sausage or plant-based alternatives. The recipe is easily customizable with vegetables like spinach, mushrooms, or broccoli for extra nutrition.
