Ingrédients
  

  • 1 lb ground beef lean, browned
  • 4 potatoes diced
  • 2 carrots sliced
  • 1 bell pepper chopped, any color
  • 1 onion chopped
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 1 tsp garlic powder or 2 fresh cloves minced
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1 tsp Italian seasoning

Instructions
 

  • Wash, peel, and dice all vegetables including potatoes, carrots, onion, and bell pepper.
  • In a large pot or Dutch oven, brown the ground beef over medium heat for about 5–7 minutes. Drain excess fat if necessary.
  • Add the onion, carrots, and bell pepper. Cook for about 5 minutes until vegetables start to soften.
  • Stir in diced potatoes and canned tomatoes, mixing well to combine all ingredients.
  • Pour in beef broth and season with garlic powder, salt, pepper, and Italian seasoning. Stir to incorporate the flavors.
  • Bring the stew to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes until potatoes are tender.
  • Taste and adjust seasoning as needed. Remove from heat and let sit for a few minutes before serving.
  • Serve hot with crusty bread or a fresh salad for a complete meal.

Notes

For extra richness, add a splash of red wine while cooking or top with shredded cheese before serving. You can also use ground turkey or lentils for a lighter variation. Leftovers freeze well for up to three months.
