  • 8 oz pasta any type
  • 4 cups vegetable broth or chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • salt to taste
  • black pepper to taste
  • fresh parsley chopped, for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant.
  • Add pasta and vegetable broth. Stir and bring to a boil.
  • Reduce heat and simmer for 10–12 minutes, stirring occasionally, until pasta is al dente.
  • Stir in heavy cream and cook for 2–3 minutes.
  • Add Parmesan cheese gradually, stirring until melted and creamy.
  • Season with salt and black pepper to taste.
  • Remove from heat and let sit for 2 minutes to thicken.
  • Garnish with fresh parsley and serve warm.

Notes

You can customize this dish by adding chicken, shrimp, spinach, or mushrooms. For a lighter version, substitute half-and-half for heavy cream.
