Preparation

  • Start by cutting the kielbasa into bite-sized pieces and chop the bell peppers. Mince the garlic and cut baby potatoes in halves or quarters.

Cooking

  • Heat 2 tablespoons of olive oil in a large pan over medium heat. Add the kielbasa pieces and sauté for about 5-7 minutes until browned.
  • Stir in the minced garlic and honey, cooking for 1 minute until aromatic.
  • Add the chopped bell peppers and baby carrots, stirring to coat with the honey garlic mixture.
  • Incorporate the halved or quartered baby potatoes, stirring well to combine.
  • Drizzle the soy sauce over the mixture, tossing to coat all ingredients.
  • Cover and lower the heat to a simmer. Cook for 15-20 minutes, stirring occasionally.
  • Before serving, sprinkle fresh parsley or green onions on top.

Notes

Store leftovers in an airtight container for up to 3-4 days. Can be frozen for up to 3 months. Reheat in the microwave or on the stovetop.
