  • 2 pieces boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1/2 cup grated parmesan cheese

Preparation

  • Gather all your ingredients. Wash and slice the zucchinis into rounds, halve the cherry tomatoes, and mince the garlic.

Cooking

  • In a large bowl, combine the olive oil, minced garlic, Italian seasoning, salt, and pepper.
  • Place the boneless, skinless chicken breasts into the bowl with the seasoning mixture and coat them thoroughly.
  • Spread the coated chicken breasts in a single layer on one side of a large baking dish.
  • On the opposite side of the baking dish, add the sliced zucchinis and halved cherry tomatoes. Drizzle additional olive oil and season with salt and pepper.
  • Bake in the preheated oven for about 25-30 minutes until the chicken is cooked through and the vegetables are tender.
  • Sprinkle the grated parmesan cheese on top, then return the dish to the oven for an additional 5 minutes to melt the cheese.
  • Remove from the oven and let cool for a few minutes before serving.

Notes

For enhanced flavor, consider marinating the chicken for a couple of hours prior to baking. You can also add extra veggies like bell peppers or mushrooms.
