  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Preparation

  • Start by gathering all your ingredients. Cut the chicken into bite-sized pieces to ensure even cooking.

Cooking the Chicken

  • In a large skillet, heat a splash of oil over medium heat. Season the chicken pieces with salt, pepper, garlic powder, onion powder, and smoked paprika. Sear the chicken for about 5 minutes on each side until they’re nicely browned and cooked through.

Making the Sauce

  • While the chicken is cooking, whisk together the BBQ sauce and honey in a small bowl.
  • Once the chicken is nicely browned, pour the BBQ honey mixture over the chicken, ensuring that each piece is well-coated.

Combining Rice and Broth

  • Add the uncooked rice and chicken broth to the skillet. Stir everything together, making sure the rice is evenly spread in the liquid.

Cooking the Rice

  • Increase the heat to bring the mixture to a gentle simmer. Once it starts bubbling, reduce the heat to low and cover the skillet with a lid. Let the rice cook on low heat for about 20 minutes.
  • During the last 5 minutes of cooking, add your mixed vegetables on top of the rice.

Finishing Touches

  • Once the cooking time is up, remove the skillet from heat and let it sit for 5 minutes.
  • Fluff the rice gently with a fork, and serve hot, garnished with chopped herbs or green onions if desired.

Notes

For best results, allow the chicken to marinate in the BBQ sauce and honey for a few hours before cooking. Keep the lid on while cooking to retain steam.
