Preparation

  • Gather all your ingredients and ensure the butter is softened.

Mixing the Dough

  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (2-3 minutes).
  • Add the eggs and vanilla extract, mixing until fully incorporated.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry mixture to the wet ingredients, mixing on low until just combined.
  • Fold in the rolled oats and chocolate chips until evenly distributed.

Baking

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Drop tablespoonfuls of dough onto the baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are golden brown.
  • Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

For a vegan version, substitute eggs with flaxseed meal or applesauce, and use plant-based butter.
