Preparation

  • Gather all your ingredients and ensure the cream cheese is softened at room temperature.
  • In a large mixing bowl, beat the softened cream cheese and peanut butter together until smooth and creamy, about 2-3 minutes.
  • Add the powdered sugar and vanilla extract. Mix until well combined and smooth, about 1 minute.
  • Stir in the graham cracker crumbs until the mixture holds its shape.
  • Scoop out portions of the mixture (about 1 tablespoon each) and roll them into balls. Place on a parchment-lined baking sheet.
  • Cover the sheet with plastic wrap and chill in the refrigerator for at least 30 minutes.

Coating

  • Melt the chocolate chips with coconut oil (if using) in a microwave-safe bowl, heating in short intervals and stirring until smooth.
  • Once the balls are chilled and firm, dip each ball into the melted chocolate, letting excess chocolate drip off.
  • Place the coated balls back on the parchment-lined sheet.
  • Refrigerate for another 20-30 minutes, until the chocolate has set completely.

Notes

These cheesecake balls can be made ahead of time and stored in an airtight container. They last up to a week in the fridge and can be frozen for up to three months.
