  • 9 sheets no-boil lasagna noodles
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach thawed and drained if frozen
  • 2 cups marinara sauce
  • 1 medium zucchini sliced thinly
  • 1 red bell pepper diced
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • In a large mixing bowl, combine ricotta cheese, Italian seasoning, salt, and pepper until creamy.
  • Prepare the spinach by rinsing fresh leaves or draining thawed frozen spinach thoroughly.
  • Slice zucchini and dice the red bell pepper evenly.
  • Layer the bottom of a 9×13 inch dish with no-boil lasagna noodles.
  • Spread half of the ricotta mixture over noodles and top with 1 cup mozzarella, half the spinach, zucchini, and red pepper.
  • Pour one cup marinara sauce over the layer, then repeat layering until all ingredients are used.
  • Finish with mozzarella and Parmesan on top. Cover tightly with plastic wrap and refrigerate for at least 4 hours (preferably overnight).
  • Before serving, sprinkle with Parmesan, let sit for 20 minutes at room temperature, then slice and serve chilled.

Notes

Customize this lasagna with your favorite vegetables or cheeses. Drain spinach thoroughly to avoid sogginess, and let it chill long enough to firm up the layers beautifully.
