  • 4 large tomatoes, blended Fresh tomatoes are preferred for better flavor.
  • 1 large onion, chopped Enhances the flavor when sautéed.
  • 3 tablespoons vegetable oil Can substitute with olive oil.
  • 2 teaspoons ground pepper Adjust to taste for desired spice level.
  • 1 teaspoon thyme
  • Salt to taste Salt to taste
  • 1 cup chicken stock Or substitute with vegetable stock.

Preparation

  • Start by gathering all your ingredients. Cut the chicken into bite-sized pieces, chop the onion, and blend the tomatoes until smooth.

Cooking

  • In a large pot, heat the vegetable oil over medium heat.
  • Add the chopped onions to the pot and sauté for 5-7 minutes until the onions become translucent and fragrant.
  • Once the onions are ready, pour in the blended tomatoes and cook for about 10 minutes, stirring occasionally.
  • Next, add the chicken pieces, stirring to coat them in the tomato mixture. Cook for 10-15 minutes until browned.
  • Sprinkle in the ground pepper, thyme, and salt, mixing well.
  • Pour in the chicken stock and bring the mixture to a gentle simmer.
  • Reduce the heat to low, cover the pot, and simmer for 30 minutes.
  • After simmering, taste the stew and adjust the seasoning as necessary.
  • Serve hot, paired with rice or bread.

Notes

Store leftovers in airtight containers for 3-4 days in the refrigerator or freeze for up to three months. Reheat by microwaving or on the stove with a splash of water if necessary.
